Coriander goes really well with this dish, adding that delicious peppery taste. However, if not available seasonally or your taste buds cringe at the thought of Coriander – try Parsley instead!
If you have access to a braai or gas grill, just follow the same recipe below but cook your Mielies on the braai.

What you’ll need:

  • 4 ears of Corn/Mielies
  • 1 Tb olive oil
  • Freshly ground pepper
  • Salt
  • 1 tsp chilli flakes
  • 1 tsp paprika
  • 1/4 cup mayonnaise
  • Bunch of coriander, leaves and stems chopped

How it’s done:

Heat a pan over medium to high heat.
Brush the Mielies with olive oil, salt and pepper to taste.
Place onto the pan to cook for about 15 – 20 minutes, or until tender. Turn frequently and also to char in places all around. This will really add a delicious smokey flavour.
In the meantime, mix together the mayonnaise, chilli flakes, paprika.
Remove the cooked Mielies from the pan and slather spicy mayonnaise over.
Garnish with coriander and serve immediately – while smokey hot!
