What You’ll Need

  • 2 Sweet potatoes
  • 1-2 green cayenne chillies
  • 2 Tbsp Honey
  • Handful Oregano leaves
  • Olive Oil
  • Salt and coarsely ground pepper



Turn oven on to 200 degrees C.

Slice the sweet potato downwards but not all the way through and pull apart slightly to make space in between each cut.

Season generously with salt, pepper, honey and olive oil. Sprinkle over the very finely sliced chillies and oregano leaves.

Place into the oven and cook until golden brown and soft inside, 20-30 minutes. Longer if preferred. Occasionally remove from the oven and scoop up and sauce, dollop over the potatoes. Add more honey or olive oil if necessary.

Serve hot and enjoy!
