Broad bean tops can be tossed raw with salad or lightly steamed and served with light drizzle of olive oil OR you can get indulgent and make this delicate green as a gorgeous side dish using this recipe.

What You’ll Need:

  • 2 Handfuls of broad bean tops
  • 1 Tbsp butter
  • 1 tsp olive oil
  • Salt and pepper to taste
  • 1-2 Garlic cloves, smashed and diced

How to:

  • In a medium pan over medium heat, allow the butter to slowly melt and froth
  • Add the garlic for a minute until fragrant and softened
  • Toss in the broad bean tops and toss in the butter and garlic until the greens are slightly wilted and aromatic
  • Crack in some black pepper and salt and serve with a final drizzle of olive oil
