The Mediterranean climate in the The Western Cape often takes me back to summer days spent in Italy and seemingly never getting enough of 3 flavours: basil, tomato and mozzarella.
This is such a great recipe as a starter, a picnic snack or a side dish with Chicken or Fish.
The flavours are fresh, the colours bright and the recipe, easy!
What you’ll need:
- 2-4 slices of farm loaf, cut into snack size pieces
- Olive Oil
- Freshly ground pepper
250g Mozzarella cut into slices
- handful fresh basil leaves
- 1-2 ripe tomatoes cut into slices
How it’s done:
Position oven rack in the centre of the oven and turn on to 220°C
Arrange the bread slices onto a single layer on a baking tray.
Drizzle the bread with olive oil and place into the oven to bake until golden crisp, about 8 minutes. Remove from the oven and allow to cool for about 5 minutes.
Top each crostini with the mozzarella, then basil, then tomatoes and season with salt and pepper to taste. Try an extra dash of olive oil over the top, and serve.
